We have designed a large number of dough resting cabinets, developed specifically for bakers. Also known as a proofer, as its name suggests, a dough resting cabinet is used for resting the dough balls or dough pieces that have been divided and weighed beforehand. In line with the particular dough type, resting time could be as long as 30 minutes, during which period, the dough pieces relax. The contracted gluten will gradually allow the dough pieces to rest and then ready to be manipulated during the next phase of the baking process called shaping or moulding. Panimatic proposes professional bakers a choice of several types of dough resting cabinet models. The Intermediate Provers allow for dough to rest in optimal conditions and is available in different designs and sizes in line with the specific needs of various installations. For example, our standard, Intermediate Prover model is designed for baguette bread (250g) and 400g bread loaves. Depending on the depth and width of the model, the cabinet can produce up to 410 baguettes or 325 bread products. We also provide dough resting cabinets with large pockets for large size breads (500g to 700g). Whether you require standard or large scale equipment, we have developed compact designs which can be integrated perfectly into small workspaces, offering optimized configuration and greater freedom of movement for the baker.
